Deeeeeelicious Banana Bread Mini Muffins-Kid Approved!

These muffins are jam packed with the good stuff. We have THE pickiest eaters in our family, and these go over Every.Single.Time. Each ingredient was carefully selected to create the perfect orchestra of flavors. Nothing processed. Zero refined sugars, and sweetened naturally with honey or maple syrup. I use honey almost daily in our home. It’s the perfect staple in the pantry. You can basically whip these up in no time with very little prep. Perfect snack, light meal accompaniment, or “pop them in as you walk into the kitchen” type of muffin. Don’t take my word for it. You simply must try them!!!

BANANA MINI MUFFINS

*1/3 cup melted coconut oil

*1/2 cup honey or maple syrup

*2 eggs

*1 cup mashed ripe bananas

*1/4 cup milk (non-dairy is fine here too)

*1 tsp baking soda

*1 tsp vanilla extract

*1/2 tsp salt

*1/2 tsp ground cinnamon

1 3/4 cups whole wheat, high-quality flour

***If you’re feeling sassy, add in some mini chocolate chips, dried fruit or even nuts.

INSTRUCTIONS

  1. Preheat oven to 325 degrees. Grease a mini muffin tin.
  2. In a large bowl, beat the oil and honey together with a whisk. Add the eggs, beat well, then whisk in the mashed bananas and milk.
  3. Add the baking soda, vanilla, salt and cinnamon, whisk to blend.
  4. Grab a spoon and stir in the flour. Don’t overdo it. Lumps will be ok! Fill your pan and toss in the oven!  Not literally…
  5. Bake at 325 for about 15 minutes or until set in the middle!

Adapted slightly by changing the cook time and used mini muffin tin. You can always use any type of loaf pan, but the baking time will be much longer.
