Lazy Sunday One Pot Chili

Nothing screams Happy Sunday quite like: football, comfy clothes, pumpkin spice candle burning and a big pot of chili simmering on the stove top!

I created this recipe through trial and error. Our kids are pretty picky, so I have to choose the ingredients and the amounts of each, accordingly. This recipe is fantastic! It is healthy and involves minimal chopping, dumping cans into the pot, little clean up and a hearty meal for everyone! Works well in the crockpot too! I love it because we can use up sad veggies at the end of the week, canned tomatoes from our garden, and eat some of that delicious free range venison that my husband provides. It packs a powerful punch of fiber, protein and lots of vitamins, making it a complete meal!

Ingredients:

1lb ground venison (or any other ground meat)

1 TBSP of olive oil

1 sweet onion, chopped

1 green pepper, chopped

2 carrots, chopped

1/2 cup riced cauliflower

1 tsp minced garlic

1 1/2 tsp chili pepper (more if you like it HOT)

2 tsp cumin

1 tsp celery salt

1 tsp table salt

ground pepper to taste

2 cans (15oz each) tomato sauce

1 can beef broth (10.5oz)

1 can black beans (15oz), drained, not rinsed

1 quart of whole tomatoes (or two small cans), drained (break up with a wooden spoon after adding)

DIRECTIONS:

Add olive oil to Dutch oven. Brown ground meat. Add peppers, onions, carrots, garlic and spices to the pot. Toss in the pot to coat everything with the spices, and until the veggies are shiny and slightly translucent.

Next, add beef broth, tomato sauce, whole tomatoes, drained beans and cauliflower. Mix to coat everything. Simmer on low for at least an hour or longer. Using the crockpot, I follow the first few steps and dump it all into the crockpot to simmer on low all day. Great meal to come home to!

Kids love it too. The riced cauliflower is great because it takes on the flavors of the chili and bulks up this healthy meal! Top with Greek yogurt, shredded cheese and green onions! Or, don’t. It is still delicious 🙂
