Black Bean Brownies (shhhhh, no one will ever know).

Our family loves brownies! I mean, who doesn’t love brownies!? Their gooey deliciousness is reminiscent of every bake sale, church picnic and school function we’ve ever attended. Good alone, good frosted, good warm, good cold, good here and good there. Brownies are good everywhere.

However, traditional brownie recipes are often bogged down by tons of sugar, bleached flour and a bunch of stuff I cannot pronounce. I’ve tried quite a few recipes that are “from scratch” and “healthy,” but they’ve always left me saying, “don’t need to make those again.” This recipe was different. They are moist and have just enough of that sweet flavor that traditional brownie recipes have, WITHOUT all of that extra stuff. Try them! Don’t tell the family they have beans in them. Or tell them, but after their first bite!

INGREDIENTS

  • 1-15oz can of black beans, rinsed and drained very well
  • 2 TBSP cocoa powder
  • 1/2 cup quick oats
  • 1/4 tsp salt
  • 1/2 cup pure maple syrup (honey works here as well)
  • 1/4 cup coconut oil or vegetable oil
  • 2 tsp pure vanilla extract
  • 1/2 tsp baking powder
  • chocolate chips. I used 2/3 cups chocolate chips in the mix! You can omit, but don’t. Please don’t.

INSTRUCTIONS

  • Preheat oven to 350 degrees (F). Combine all ingredients (except chocolate chips), in a food processor or blender. Make sure it’s blended until it’s nice and smooth!
  • Stir in chocolate chips and pour into an 8×8 greased pan.
  • Bake for 15-18 minutes. Cool at least 10 minutes before cutting. They may seem undercooked, but you can put into the refrigerator and they will be fantastically firm and delicious!
  • Grab a glass of milk and enjoy!
